Akitakomachi rice -  one of the most popular,  high-quality  and valued types of sushi rice   in Japan. Properly prepared, it has an ideal viscosity, while maintaining firmness and fluffiness. Its smell is extremely pleasant. Due to the length of the growing season, it is harvested only once a year. The ratio of demand to availability makes the prices of this rice relatively high.
