Filo (yufka) is a type of very thin, non-yeast layered cake used in the cuisine of Central and Eastern Europe and the Balkans. Although associated mainly with Greek cuisine, it actually derives from the cuisine of the Ottoman Turks. It is the basis of many dishes such as baklava and börek.
